INGREDIENTS
- 1 BRZ smoked calabresa sausage sliced
- 3 bacon strips slice
- 1/2 brown onion diced
- 2 cloves garlic mince
- 1 tomato diced
- 1 red capsicum diced
- 1 red chilli diced
- 1 bunch of coriander chopped
- 1 tablespoon BRZ Xtra Mojo
- 1 tablespoon of butter
- 1/2 tablespoon of olive oil
- 2 cups of basmati rice
- 3 cups of chicken stock
- 2 teaspoons of salt
- 200g rump steak (This recipe you can use for the meat all the leftovers of the bbq. But if you don’t have just follow this step)
METHOD
- Cook the rump steak on the barbecue or in a fry pan over high heat. Cook quickly to your preferred doneness, then rest before dicing into small cubes.
- Heat butter and olive oil in a large casserole pan over medium high heat. Add chopped bacon and calabresa sausage. Cook until lightly browned, then remove and set aside.
- In the same pan, cook onion, tomato, capsicum, coriander roots and garlic until softened.
- Return the bacon, sausage and diced steak to the pan. Stir to combine.
- Add rice, chicken stock and salt. Stir well and bring to a gentle simmer. Reduce heat and cook on low for approximately 15 minutes or until the rice is tender and liquid absorbed.
- Turn off heat and allow the rice to rest for another 15 minutes to finish cooking and develop flavour.
- Finish with fresh coriander and serve with a fried egg on top.
