Home style mojo chicken

INGREDIENTS

  • 8 lovely legs
  • 2 tsp of mojo
  • 1 lemon juice
  • 4 garlic clove mince
  • 1 brown onion diced
  • 1 tbs thyme
  • 1 bunch coriander chopped leaves and root
  • 1/2 red capsicum diced
  • 2 tomato diced
  • 1 carrot diced
  • 2 tbs olive oil
  • 1 cup chicken stock
  • 1 tsp salt

 

METHOD

  1. Marinate the chicken with mojo, lemon juice and garlic. Leave for 2 hours or overnight;
  2. Heat the pan, sear the chicken, in small batches. Leave on the side;
  3. Sauté onion, carrot, coriander root and capsicum. About 4 minutos medium to low heat. Add tomatoes. Add tyme;
  4. Bring the chicken back to the pot add chicken stock and cook low heat for 40 minutes;
  5. Finish with coriander leaves;
  6. Serve with roast potatoes or rice.
