INGREDIENTS
- 8 lovely legs
- 2 tsp of mojo
- 1 lemon juice
- 4 garlic clove mince
- 1 brown onion diced
- 1 tbs thyme
- 1 bunch coriander chopped leaves and root
- 1/2 red capsicum diced
- 2 tomato diced
- 1 carrot diced
- 2 tbs olive oil
- 1 cup chicken stock
- 1 tsp salt
METHOD
- Marinate the chicken with mojo, lemon juice and garlic. Leave for 2 hours or overnight;
- Heat the pan, sear the chicken, in small batches. Leave on the side;
- Sauté onion, carrot, coriander root and capsicum. About 4 minutos medium to low heat. Add tomatoes. Add tyme;
- Bring the chicken back to the pot add chicken stock and cook low heat for 40 minutes;
- Finish with coriander leaves;
- Serve with roast potatoes or rice.
